Taste plays crucial roles in evaluating chemical contents in foods and drinks. Taste signals are sent to the central nervous system then induce various biological reactions such as secretion of saliva, maxillofacial responses and emotions. These reactions are very important for harmonious feeding behaviors and nutrient absorption. In addition, taste sensors exist not only in oral cavity but also in various organs such as airway, gastrointestinal tract and brain. In this department, we will focus on the function of taste in whole body and tackle to find new approaches for oral and total health from the viewpoint of taste.
